Each morning one of my first chores on the ranch is to go out to the chicken coop to see if the ladies have left me any egg gifts! It has been fun having the chickens on the ranch and working with them to help create a sustainable food system. Vegetable scraps from my kitchen end up in their coop to enhance their diet, the old nesting hay and egg shells get mixed into our compost to add to our garden and avocado orchard, and then we grow more vegetables to cook and feed to the chickens. This delicious and nutritious toast helps sustain us on the ranch to continue working the land.
1 or 2 slices of homemade organic bread or organic bread of your choice
1 large organic avocado
1 handful of organic spinach or arugula
1 small handful of toasted organic sunflower seeds
4 hardboiled organic ranch eggs
A drizzle of olive oil
A pinch of sea salt
Pre-heat oven to 350 degrees. Fill pot with water and hard boil 4 eggs. Remove eggs from pot and run under cold water to loosen shells. Peel eggs, slice in half, and set aside. Meanwhile, drizzle sliced bread with olive oil and place in oven until lightly toasted. Mix greens with a squeeze of Meyer lemon juice, a pinch a sea salt and a splash of olive oil. Slice avocado. Top toast with greens, sliced avocado and sliced egg and sprinkle with toasted sunflower seeds and Wild Honey Sesame Granola.
