Orange Wild Honey Sesame Cake with Cardamom

During quarantine, we’ve all had to get creative with activities that we can do in our own home. Baking is something that I’ve loved for a long time, but just recently have gotten back into it. Here is an easy cake that is sure to be a family favorite using orange, honey, sesame, and our beloved Wild Honey Sesame Organic Granola!

Dry Ingredients:

1 1/2 cup Ocean Ranch Organic All Purpose Columbine Flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

Wet Ingredients:

1/2 cup runny tahini (sesame butter)

Zest of 1 organic orange

1/4 cup Ocean Ranch Organic Cane Sugar

1/4 cup organic honey

2 organic eggs

2 tbsp canola oil

3/4 cup organic unsweetened yogurt

1/3 – 1/2 cup organic orange juice (juice of 1 organic orange)

1 tsp vanilla extract

1 tsp cardamom

Syrup:

4 tbsp organic honey

1 tbsp water

1 tbsp orange extract

Garnish:

Ocean Ranch Organic Wild Honey Sesame Granola

Preheat oven to 350 degrees. Grease one 8 inch cake pan with butter and coat lightly with flour. In a large bowl, combine flour, baking powder, baking soda, and salt. Set aside.

Using an electric mixer, beat together the tahini, orange zest, sugar, honey, and egg. Mix in the oil, yogurt, orange juice, vanilla extract, and cardamom until incorporated.

Add the flour mixture to the wet ingredients slowly and mix JUST until incorporated.

Pour the batter into your prepared pan and bake in the oven for 30-40 minutes. To check if it’s completely baked, stick a toothpick or something similar in the center. If it comes out clean it’s done, if it has batter on it, stick it back in the oven for a few minutes and try again. Once the cake is done, let it cool for 10 minutes and then remove the cake from the pan to let it cool on a wire rack.

Meanwhile, prepare the syrup by combining the honey, water, and orange extract in a saucepan over medium heat. Let it come to a boil for about 4 minutes.

When the cake has cooled, level the top of the cake if it has domed with a serrated knife. Turn the cake upside down and poke a bunch of holes in it. Pour the honey syrup on the cake and garnish with Organic Wild Honey Sesame Granola.
