Lemon Blueberry Surprise Pancakes

Mix up something different to start your day! Perfect for those picky kids or a treat for your Sunday morning brunch, this recipe is a fun twist on the classic blueberry pancake.

Dry Ingredients:
1 cup Organic All Purpose Columbine Flour
1 teaspoon baking powder
¼ teaspoon baking soda
1 tablespoon of hemp protein powder
Pinch of sea salt
1Wet ingredients:
¾ cups vanilla yogurt
Zest of 1 organic Meyer lemon
1 egg
1 tablespoon melted butter
¼ cup fresh blueberries
Blend the dry ingredients together in a mixing bowl and set aside. Blend the wet ingredients in a separate bowl. Add the wet ingredients to the dry and mix. The batter will be lumpy. Heat a griddle with 1 tablespoon of butter on medium heat. Scoop 2-3 tablespoons of batter into skillet. When the batter bubbles flip pancake over. Adjust heat if necessary.
