As we get back into the swing of things, kids are back in school and we are going back into the office, we will be fighting against the clock trying to get out the door in the morning. We’re sharing our favorite quick healthy breakfast bites to help jumpstart your day!

 

Avocado Toast

Yes, we know, this is the trendiest of all trends, but avocado toast truly is one of the easiest most nutritious breakfasts out there. You can sub for GF bread, bake your own, or splurge at your local bakery, but honestly just some whole wheat bread from the store works perfectly for this. Kids love it, adults love it, it’s a crowd pleaser for sure and it takes as much time as it does to stick a piece of bread in the toaster.

Organic Oatmeal Cups

Oatmeal is one of the most heart healthy breakfasts out there and is great for anyone who needs something that’s going to fill you up and not weigh you down! Ocean Ranch Organic Ancient Grains Oat Cups are perfect for those busy mornings because all you need is boiling water.

Greek Yogurt & Organic Granola

Another sustaining healthy breakfast: Greek yogurt. It’s creamy, almost like dessert in the morning! It has loads of calcium and requires zero preparation. Nut Butter Whole Wheat Toast

Smoothies are so easy, require little prep and very little cleaning! Throw frozen blueberries, almond milk, a banana, almond butter, & a handful of spinach or kale (if you want to get your greens in) into a blender. Blend for a few minutes and you’ve got yourself a tasty smoothie! Easy to bring on the go with you if you’re low on time.

Make Ahead Egg Sandwiches

Confession: my favorite guilty pleasure is a sausage & egg breakfast sandwich on an English muffin. When I realized how easy they are to make ahead of time, I had to find something a little healthier! I scramble egg whites, and layer them on top of a whole wheat English muffin with a tempeh patty. Wrap it all up in some aluminum foil and freeze. Throw in the toaster oven in the morning for a few minutes and you’ve got a hot breakfast sandwich!

Spinach Frittata Muffins

These are great to make ahead and are a hit with my one-year-old son. Perfect for those busy mornings when I don’t have time to make him breakfast. I like to add parmesan to mine, but you can easily add any other cheese you would prefer. Just. Take 4 large eggs and 4 egg whites and whisk in ½ cup milk, 4 cups of spinach, ½ cup cheese, salt, pepper, & paprika. Bake in the oven at 450 degrees for 15-18 minutes. They last up to four days in the fridge (in an airtight container) and 3 months in the freezer!

Acai Bowl with Fruit & Granola

Acai bowls are a great way to have a smoothie and add in fruit in and granola to make it more of a meal! You can buy acai packets from the freezer aisle or acai juice and add ice and coconut milk. Blend to desired consistency and pour into a bowl.
